Why... or how so?

If the Mini 2 has the M7 processor then it's pretty much obvious it has to have the A7 processor - of sorts.

1 - The A7 doesn't have the graphics power to run the retina display.

2 - Apple will want to keep the cost of the mini low, hence A6X over A7X.

But who knows?

Alongside a Retina screen, the iPad mini is expected to include an A7 processor, while the full-sized iPad will offer an A7X processor.
Both Retina iPads have exactly the same number of pixels and would therefore use the same kind of A7 processor, if not an A6X in the mini. The A7 is reported to have quad-core graphics already, so there might be no A7X this time around. But if there is a special A7X optimized for high-def displays, than both Retina iPads would need it and get it.

This is where I show my ignorance as it pertains to processors. The A7 runs the retina display on the iPhone 5S. So is it that the A7 processor needs even more power because the iPad screens are much larger? Again, please forgive my lack of knowledge on this subject. I'm trying to understand how all of this works.
 
The Retina iPad Mini is welcome (and overdue, IMO) yet while I can appreciate a lighter/thinner form factor in the larger iPad, those thin side bezels are going to make holding it in portrait mode a PITA.

People said that about the mini, it's fine. I expect this will be the same.

Pretty sure you got it. If you remember when the iPad 3 came out, it came with A5X. At that same time, the current phone (the 4S I think?) was shipping with the A5. The A5X is the same processor as the A5, but just better graphics, to pick up the slack because of the higher resolution.
 
This is going to be an expensive event for me. I'm in the market for 2 new iPads and a rMBP. My credit card only just recovered from the iPhone 5S! :p

To what? Retina is already supposed to be the best of what human eyes can see. They could increase the screen size to further increase the pixel count, but we haven't seen that in the leaked space gray parts. Besides if A7 and A7X each have quad-core gpus, why do you expect one to be significantly faster than the other? When the A5 chip only had dual-core graphics the A5X with quad-core graphics was naturally much faster. An A7X would need some kind of octo-core graphics to outperforme the A7 in the same way again.

I'm still confused as to why anyone doubted this at all after WSJ more or less confirmed it via a controlled leak on the day of the Nexus 7 launch.

I predict that the Mini will sell 2:1 over the full size iPads during the holiday season.
 
That could cause some issues in a few years when virtually all apps have moved to 64-bit. I wouldn't be surprised if the mini actually has the A7 or even an A7X

The iPhone 5C doesn't have a 64-bit CPU.

The transition to 64-bit will be done starting with the high-end (9.7" iPad, iPhone 5S) and will move down to the low-end next year.

You guys should really lower your expectations regarding the iPad mini. You're less likely to be disappointed :)

Its good to see that some people here actually know the hardware in the current devices.
 
It will be interesting to see how this release does. With ios7 not hugely popular, and Samsung having just released tablets with true multi-tasking,
will apple consumers turn out for the holidays. I think so--this ipad will represents the maturation of the form factor and will attract buyers. I think in the future tablets will start to meet with pc like market inertia.
