For other apps, I'm not really sure... I guess photo booth, just 'coz it always cracks me up. :p
 
Apollo IM browser. Best I have ever used and I have tried them all. So many great features!
 
Dont really play games so ill go with my most beloved app which i use everyday.

Sketchbook pro.
 
What does Plex do? I read the Wiki but came away w/ less of a grasp on it than I had before.

It's a media server so you can stream your Music,Video etc to your iPad from your Computer.

It has a pretty nice interface on the iOS app.

Many fav apps have come and gone, but my current favorite is Words With Friends. Its so addicting. You can start several games with random opponents and its better than Scrabble because of this random opponent feature that doesn't require Facebook.

Another one is Family Feud. Lots of fun.

The Jurassic park game is rather entertaining, although it is largely gesture based it is fun to see how many ways you can die :D
 
After suffering the travesty of the Music app that Apple foisted upon us in iOS5 that renders podcast playback an utter pita on the iPad, I downloaded Downcast the other day. It was recommended in the gripe&moan (valid gripes and moans, I was one of the gripers!) thread re: the terrible Music app.

Anyway, Downcast is very good for podcasts! Universal app, using it on my iPhone too, can't see me going back to the default Music app even if Apple 'fess up and put it back into a fit state. I'm really pleased with it, should have got it ages ago, offers the kind of functionality (auto retrieval of podcasts etc) that ought to have been baked into the iPad anyway. Amazing that Apple instead took features AWAY from the Music app instead, sheesh. Don't much care now I have Downcast though.
 
I'm a big fan of iAnnotate. Previously I was using another app (GoodReader) for grading papers, but this one is much more comprehensive.
