First of all, I'm not confident that those numbers can be relied upon as fact.
Secondly, demand was much higher than most expected. There was article after article saying that the Apple Watch would flop - and that smart watches have been around for years, but with limited adoption, even among tech nerds.
It makes sense that Apple would want to be conservative with their estimates. Customers being forced to wait a couple of weeks is a small problem in the grand scheme. However, having hundreds of thousands of products sitting in a warehouse because of lack-luster sales would be a much bigger problem.

only to arrive over a month late.

Canada
What you say probably makes sense from Apple's perspective. From the customer perspective though, it's quite a negative experience.
38% without even a shipment date is even worse than those who have May/June shipping dates.
> "According to Slice, 547,000 more watches will ship between April 27 and June 11. Of those orders, 33 percent will get delivered in April, 28 percent in May and 1 percent in June. However, 38 percent of the orders, which translates into 647,000 watches, have yet to receive a shipment date, Slice said."

No watches are arriving "over a month late"
They are either arriving when Apple said they would when your order was processed, or they are arriving early. Lots are now arriving earlier.
While we are waiting in our "Processing Items" limbo (42mm SG+BSB Confirmation xx:08:11am), I was curious:
Has anyone seen an Watch out in the wild yet? (In-store try-ons don't count, obviously.)
The students on my campus are usually quick to adopt new Apple products, but despite scanning the wrists of everyone whose path I've crossed today, I've yet to see one.
It's still very early in the watch rollout, of course, but it's always fun to spot a fellow early-adopter.
I haven't seen one outside of an Apple Store, but I haven't been looking... and it seems like it would be easy to miss if you weren't looking for it.
For instance, I would have never noticed the ones on the wrists of the celebrities if blogs didn't point them out.

Yes. My wife on day 1. I selfishly ordered hers AFTER mine and she still beat me.
Same exact scenario here. Maybe that's what we get for ordering ours first.
Apple rep told me they expect to ship much sooner than the estimates say. Also, I don't buy that demand was higher than expected. This company lists among the highest profit makers in the world. Do you think their analysts would underestimate demand for every single launch? Because this happens with just about every launch.
As much as I love Apple, this is poor, especially after teasing the Watch in October, then a pre-order weeks in advance only to arrive over a month late.
How does a watch arrive a month late when they are only four days into their first 14-day delivery window?
Because we live in a world where people want immediate gratification, and man children want a shiny bauble to play with on release day. Some of these children even attach self-value to getting baubles on release day and feel let down by the world's most valuable company when it doesn't deliver (despite making no promises to).
I knew before I even placed the "order" which I haven't paid yet, the delivery time. Everyone did. And now they don't like dealing with the consequences of their decision to accept the delivery window.

About the middle of last week I called Apple to change the card I was using to charge my order. The Apple rep on the phone told me my order was "in a really good time frame" to ship out much earlier than expected.
I'll believe it when I see it. I ordered the 42 mm SG--confirmation at 2:05:24 (I think) and people that have ordered the same model after me are getting shipping notices now. My order hasn't moved.
Not mad, just curious as to how this is all working. Soon, we'll all have our watches and will feel silly for having checked on our orders so much.
