Ripit - for the few personal dvds i want to back up and for the ones I want to watch from my hard drive without carrying the disk around.
VLC - video player. I dont want to add plugins for quicktime and i used vlc on my windows pc.
Self Control - for the time i need to do serious work without any interruptions from email, chats or facebook.
 
AppZapper - If there's a better app for this, let me know please.

I used AppZapper a few years ago, and it would always leave behind some .plist files, and even some occasional cache files.

I'm wondering if anyone has used AppTrasher? It's description sounds much more thorough.

I bought AppZapper 2 years ago and lately I've been trying Apptrasher. In every case Apptrasher found same files as AppZapper and occasionally another. I found a free app called Easyfind over a year ago (its more of a spotlight search replacement) but because I can sometimes find files with it no other dedicated app remover does I use it to remove app's and associated files manually (I missed Tigers Spotlight Window that I used to remove apps and associated files with manually). But I run AppZapper, Apptrasher, Hazel (in background) and Easyfind every time I remove an app just to see what they find. I still prefer EasyFind.

-Google Chrome: Combines the things I like best about Safari and Firefox into one browser, I'm sure it'll only get better by final release.

-iTrash: Helps removes applications completely.

-MPlayer OS X Extended: I've found it to be just as versatile as VLC, with better tracking and better performance (with the MT binaries).

-Transmission: It does what it does, and it does it well enough for me.

-Colloquy: Free IRC client that also does its job.

-Stickies: I personally think this is the best Apple app there is...not too fond of a lot of their other options...

Alfred - Great app launcher
Transmission - IMO best mac torrent application
Google chrome - Nice fast and lightweight browser
1Password - Absolute must have for password management. Sadly does not support chrome yet.
Movist - Excellent media player with support for many formats
Hotspotshield - For those pesky sites that only work from the U.S

I surfed google, and this forum about what applications would be necessary for a new macbook owner. But I couldn't find anything (if i DID miss a similar thread, I'm truly sorry).

I was wondering what are absolutely necessary or really beneficial applications I should get? I installed appcleaner which seems to be real good.

Back to the original question, I really like the following:

Adium: IM client that supports everything. Ugly at first but there are many downloadable themes

Rapid Weaver: Perfect for websites and blogs without messing with lots of code

Paragon NTFS: For writing to NTFS drives (there is a free program that does this but the name escapes me at the moment).

I know there are a ton missing that I'm not thinking of right now but those are a few top ones.
 
I don't have a lot of mac expirience (my first mac is 1 month old today... party! :D) but I would recommend:
Better Touch Tool - allows to use gestures as shortcut. I use gestures for pretty much everything now in Safari (opening/closing tabs, switching between them, refreshing etc) - very useful.
OpenOffice - similar to Microsoft Office but it's free :)
Onyx - deletes cache files etc that you don't need.
 
Growl - freeware, kind of event messaging software. integrates with adium, itunes, safari, etc. very good.

Perian - codecs for quicktime.

flip2mac - play WMV with quicktime

Mac The Ripper - DVD ripping software

amule - equivalent to emule.

gimp - photoshop like.

I know it helped me, and it might be something to consider:

I switched to 100% Mac usage about a month ago...I sold my PC desktop and my Macbook Air and got a new high-end 15in MBP. However, I was kind of scared to 100% ditch the Windows world, so...

I bought Parallels Desktop 5 and a full version of Windows 7. Now I can run Windows 7 on my new MBP if I NEED it. Psychologically it has helped me knowing that I still have a Windows option if I need it. And in reality, I have only opened it a couple of times, most times I don't even log the Windows 7 in, it sits idle and rarely used.

Google Chrome - Web Browser is blazingly fast on the Mac.
I have setup the Google DNS too. WOW! It's truely a pleasure surfing the net when using Google Chrome.
