It's a very tough decision.
I bought a 6 last year because it was already a decent jump from the 5S, I thought it would be easier to carry, and I didn't know if I wanted to be seen with the Plus, i.e. it would just look awkward in a crowded environment. A part of me always thought though, if my mind changed for the next year, the plus would also feel fresh since I chose the regular 6 at that time.
Fast forward, and I did choose the plus this time as larger phones have become that much more common, and I wanted it to feel "new," again.
It is impressive and it works well. However, you don't gain that much from it. Most websites tend to just have slighter larger text, so you don't "see," much more, same with apps. If you do see more, it's maybe one line of text more, nothing to write home about.
Images are more immersive as a larger image rather in your library or at NY Times as images will always look better, but you have a large trade off for that, a large device to hold and carry.
Some games are better with a larger screen, and videos are always better, in my opinion.
However, for most things, it will work exactly the same on the 6 but be a bit smaller, with a lot more portability.
I honestly think you have to look into the names of these products. iPhone 6 and iPhone 6S are the iPhones, they continued the line. Many like myself, this is a comfortable one hand most of the time device. In my opinion, the iPhone 6 Plus and iPhone 6S Plus was a quick addition to the lineup to make sure Apple had an answer to the gigantic phones available elsewhere. They might not have believed in it, but if some people want it, you need to have one too. Honestly, it's just blown up without much care to it being anything extra beneficial, besides OIS, which in the grand scheme is very important to many, but more there, just because it's physically possible in that size.
I'm torn. I like the Plus, and I don't think I would mind carrying it the next year, but I worry how I would go back to a smaller size at that point? On the other hand, when I pick up my 6 now, I go "wow, this feels like an iPhone. You can take and use this anywhere!"
The plus doesn't feel like an iPhone to me, but again, I don't dislike it. Not sure what way to go. It's tough.
