You'll still be able to do that even if they don't ship it until the evening before. I've done it.

Nothing yet here in CA. Still "Processing..." for delivery on the 25th. Last time I bought an iPhone on pre-order, I don't think I saw any change until Tue., or Wed.

I pre-ordered mine pretty late on 9/15, was surprised to still have a 9/25 delivery.
My order (6s 64GB Rose Gold on AT&T) changed to PFS around 11am PST on Saturday.

I always order the Space Grey, in part because I don't like the white models. Nothing wrong with white, and white does evoke "Apple". But when the screen is turned off it will always be black, and I don't like the look of the black screen against the white bezel. I prefer it to look like a clean, uniform slate.
If there were a way to make a display that appeared white when turned off, then I'd love a white iPhone.
