I don't think you can trust any tracking at all or lack of tracking as indicating a true picture of anything. I have been through all of this before and it varied between no tracking at all and some tracking but regardless they always got here on the launch day (in fact on one of mine last time, it got absolutely no tracking at all). I know it makes you crazy but you shouldn't put too much into what tracking there is or isn't. One of my phones shows it got to and left Alaska but yet the other shows nothing and it is the one that left China a day early. I bet both are sitting in the same USA hub today waiting to be shipped out overnight on Thu. It was like that last time as I said, and both got here right on time. There is just too many of them and all shipped in bulk for UPS to get it all right or even try. And both last time said pending still when they were in my hands. Pending just means they have been completely authorized by the CC company/bank and that is all Apple cares about because it then means they have gotten authorization and they can come in any time, within 30 days I think the bank said, to actually get their funds.
