People are definitely confusing Dolby Atmos in Apple Music on the Apple TV with Spatial Audio for video content. You can experience Dolby Atmos Apple Music on tvOS 14.6 and a pair of compatible headphones right now. Spatial audio for video content isn’t coming until tvOS 15 though.
And head tracking is ios15/TVos 15. I am listening to head tracked spatial audio now on AirPods Pro via iIOS 15 spatialize stereo. It is astonishing. It works the same way Apple described for head tracked spatial audio in TVOS 15.

Is anyone running the tvOS developer beta on the 2017 model and getting head tracking for Atmos content? I can’t find any info about whether that model supports the feature or if it’s just available on the 2021 model.

Apple support page says to get Dolby atmos music for non Apple chip headphone you have to select always on. Apple chipped headphones will be Dolby Atmos if auto is selected.
Sorry but that makes no sense to me. Why would anyone chose to listen to Atmos only on Apple earphones (Automatic). Either you like Atmos, in which case you want to use it on all headphones, or you don't. And why would Always On Atmos work on third party headphones but not on third party speakers - the iPhone does not know whether it is Bluetoothing to a speaker or to a headphone? And will the toggle behind the Volume button work when Atmos is set to "Always On" (its seems not to)? Weird. And how about that Marvin Gay demo? It sounds Mono / Stereo / Atmos no matter what hardware you listen to it, and irrespective of how you set up your iPhone. And to top it all off, if you have "automatically download music", but forget to toggle on "Download in Atmos" by mistake, then you cannot listen to the music on Atmos. Sorry for the nag, but I want this to "just work" because I like the concept a lot, and its far from it.

If you choose Automatic, here’s what you'll need

Supported Songs will play in Dolby Atmos automatically when you're listening using:
  • AirPods Pro or AirPods Max with spatial audio turned on. Go to Control Centre, touch and hold the volume button, then tap Spatial Audio.
  • AirPods
  • BeatsX, Beats Solo3 Wireless, Beats Studio3, Powerbeats3 Wireless, Beats Flex, Powerbeats Pro or Beats Solo Pro
  • The built-in speakers on iPhone XR or later (except iPhone SE), iPad Pro 12.9-inch (3rd generation or later), iPad Pro 11-inch, iPad (6th generation or later), iPad Air (3rd generation or later) or iPad mini (5th generation)

If you choose Always On, here’s what you'll need

If you want to use other headphones that don’t support automatic playback, choose Always On.

So what would be the befit of "Automatic"?
Always On works with Apple products and all other headphones.
Automatic only with Apple products.

It makes no sense at all.

And if Always On works with all headphones, why would it not work with all Bluetooth speakers?

And again, why does the Marvin Gay demo sound exactly the same no matter what is toggled on or off on the iPhone?

Its all very very confusing.

Spacial audio is a feature I don't need or desire. To those that will use it, good for you.
And the way it's currently implemented, it's designed to sell more Apple products/services a common theme throughout the WWDC 2021.
Please explain how an Spatial are you actually designed to sell more Apple products or services?
If you have Apple Music you’re already paying for a service to enjoy it nothing extra needed.
If you have an Apple headset in order to enjoy SpatialAudio or another headset that actually is capable of using the technology again you’ve already paid for it.
How do you special are you inflict or is designed to get you to purchase more products and services from Apple? You’re already using two of them if not at least one of them and competitions also featuring special audio so that mean that there is an taste and designed to get you to purchase the products services??!

did you just read what you typed & pasted verbatim from somewhere else?

My favorite part is how they act like they cracked the code.

Woah dude, did you know that Apple improves their products so more people buy them and so people who already own Apple products are happy they purchased them?

What a concept.

Head tracking on the Apple TV seems like a nuisance and unnecessary in the best of circumstances. Maybe games could make use of it but movies/tv? Hard pass. Spatial audio (aka Dolby Atmos) sure but not head tracking.
No no nooo, head tracking is wonderful for movies & TV on the Apple TV! Spatial does nothing for me without it, just sounds like a remix, and I turn that off, but with head tracking, it’s amazing how much it really sounds like it’s coming from the TV, I love it.

I agree. It’s amazing.

I just found out that I could get spatial audio on my tv by plugging in iPad by hdmi and connecting my AirPods Max to the iPad. Now I just play movies or music and get the head tracking and spatial audio without upgrading to Apple TV 4K.
