Gotta love a world where headphones and refrigerators need software updates.
A. Freedom of moving around without needing your phone in your pocket.
B. No cords to get tangled or damaged.
C. Wired headphones always seem to snag on everything and yank on my ears (especially when doing things like shoveling... the wire gets caught easily on my jacket zipper)
D. Light weight. Can hardly feel them there.
E. The corded headphones brush up against my face and that's slightly uncomfortable

Get a modern, dual-band router, and make sure your MBP connects to the 5 GHz WiFi. That won't help if the 2.4 GHz band is swamped by other devices/neighbors; but it will remove at least one source of 2.4 GHz "pollution" for the AirPods to deal with.

Not for me. They connected a little faster, but audio is completely distorted.
Do you think having too many Bluetooth devices could be the issue? I have Magic KB, Mouse, and Trackpad all going.
I've had this same issue on my 7 Plus, and I can confirm that it occurs specifically when the phone is doing something (I've noticed that certain apps seem to exacerbate the problem further). I had the issue under 10.2 with the AirPods out of the box. I replaced the AirPods and the issue continued. I even took my 7 Plus to the Genius Bar to do a diagnostic on the bluetooth antenna; no problems were found. So at the moment there doesn't seem to be a solution.
I've also reset the bluetooth, repaired the AirPods, hard-restarted the phone, and reset network settings, all to no avail. Through my own testing, I have not noticed the problem on other devices such as my iPad and/or MacBook Pro.
Unfortunately, the next step of testing would be to back-up and restore the iPhone, and I can't quite bring myself to do that as it's a huge pain in the butt (and still might not fix the problem).

Save the environment and monthly electricity bill? For something that draws less power than an electric clock? Okrightsure...Well, my local evil cable company forced some non-5GHz crap router on me. While I indeed could put a second box next to it I'd rather save the environment and monthly electricity bill as otherwise WiFi just works.
And why should I due to Apple's design decision change my internet connection, beside I could not control it in hotels, cafés, airplanes, work etc. anyways?

Bummer! Hopefully they can do something with 2, 3, 4 taps. I love them, but they do need something more to really be complete.AirPods have no touch interface so there will not be any "gestures". Apple came up with a clever way to use motion sensors to detect taps and convert those into a simple command. But this will not support an expanding range of touch inputs in the future.

BTW, regardless of your attempting to lay blame where it absolutely doesn't belong, this has NOTHING to do with Apple. AFAIK, Bluetooth IS 2.4 GHz, PERIOD, at least in the U.S. So, if you have BT headsets, or are DESIGNING BT headsets (or any BT gear) they WILL be 2.4 GHz.
And Apple similarly can't control your WiFi environment, nor your evil cable company. But if you whine to the evil cable company about Wifi issues due to overcrowded 2.4 GHz band problems, they MIGHT be able to bring you a nice dual-band Router that they have available for those contingencies. That won't do anything for when you are out-and-about (but again, that's out of Apple's hands); but it WOULD make your life at home SO much better... And not just because of the AirPods.
Try not being so negative next time, too...
And your use-case is everyone's use-case, right??? A wall clock runs on a AA or so battery for years. A WiFi router draws quite some content power out of the grid day and night, ...
Apple did not had to nix the headphone jack, simple as that. I do not ask them to take it away from the iPhone 7.
