Apple needs to figure out how to make the updates smaller, then enable OTA updating. That way people don't have to plug into a computer to get the updates. I mean these devices shouldn't require a computer to get the latest critical security fixes.
On my 3GS the update was 291MB...
None of Apple's iPhone updates have ever been "updates". They include the entire OS in every update. It essentially overwrites all of the OS files again.
My phone updated and now no longer loads any apps except the core Apple ones. Everything just tries to load a view and then crashes.
My 3G is unlocked but still on O2. When I add the profile, it gets rid of the tethering option. I'm not sure if the profiles on benm have been updated yet for UK
Uhh...huh. Well, I stand corrected, by the evidence of your screenshot.
Interestingly, though, I cannot reproduce this. I tried turning MMS Messaging off, and I still had a QWERTY keypad for the To: line. So I rebooted the phone. Still QWERTYfied.
I still prefer QWERTY myself so I can type in contact names, so no worries there, but interesting nonetheless.

This update sounds like it does nothing to address battery life issues that have been plaguing me on my 3GS since 3.1.1 update. My iphone consistently drains to 30-40% in a day with less than 2 hours usage. I have exchanged my phone and the problem seemed to go away for a about a day then returned. I hope they fix this. On the flip side of this, my wife has an older 3G that seems to last at least 3x longer than my newer 3GS and our devices are configured almost identically and we have many of the same programs.
If Live Updating is checked on a Smart Playlist in iTunes, the playlist on the iPhone bears no resemblance whatsoever to the one in iTunes.
I have a 'chart' playlist on my Mac (sorted by most played) which, on my iPhone, just has a bunch of completely random songs.
It's been like it for over a year I think.

Tethering won't work with a factory-unlocked phone under 3.1.0-3.1.2 if you're not using an "Apple-approved" carrier. It sounds like 3.1.3 might resolve this issue.
