When trying to download via apple develper "release" software you get catalina

I do not even see it. I see Xcode and only.

Apple Store (it redirects to System Preferences). Download it and voilá. It will be in the Applications folder after downloaded...

Is the new logic and final cut in the store as well? i dont see new version of the mac app store

Downloading now! Pressing Get from the App Store page, brought up the not found error in system preferences but then right after it refreshed and gave me the option to download.

Just worked for me by quitting System Prefs then opening the Big Sur link from the App Store.

12.18GB.

How to download the full install for a USB drive?

Just download, then use macdaddy bootable installer app.

Up now in So Cal. It usually takes 10 mins after release time, but Big Sur took 15! Trying it first on my guinea pig - my late-2013 MBP (Retina). That one usually sits collecting dust until I need it for the rare time I actually NEED to use it. Way too nervous to install on my new 2020 27" iMac.
