From what I've heard iOS 10 slows down the iPhone 6. So I'm basically stuck with WatchOS 2...

EDIT... Rebooting both phone and watch. Removed the beta profiles a couple days ago
44 mins remaining. Maybe Apple should have staggered the iOS 10 and Watch OS release.

I removed iOS beta profile but guess iOS stays on GM. Watch app still stuck on watchOS 2.2.1. I am currently in Germany.

I've been running iOS 10 since the first public beta and now the GM on my iPhone 6 Plus and it's just fine. No slowdown at all.
