Just to follow up… I did manage to update my iPod Touch OTA but while it was connected with the older versions of iTunes (12.4.3) and it worked!
I'm also in the process of doing my iPad Air 2. :)

Is it wise and safe now to just upgrade from OTA or will I still need to connect with iTunes 12.5 at some point?
 
Anyone who updates their phone (apple or otherwise) over the air for a MAJOR release is just asking for trouble.
So why does Apple make it available? To create trouble?
Besides, some intermediate updates can be of the same size and importance than a MAJOR one.

No, people that update first, can afford to do it and resolve any lingering issues that cannot be tested in Beta; because betas don't have the wide availability and huge crush of demand.
They don't push the update to everyone. You have to seek it out. That tells you they don't want Grandma to update in the first hour.

It's not over for me. I cancelled the downloads yesterday until I saw that Apple released the info that the issue had been resolved. I restarted the downloads and then installed them this morning. Result: 1 iPad Mini worked fine, 1 iPad Pro 12.9 bricked and one iPhone 6s+ bricked. Now going through iTunes. Gong show.

Yesterday 2 minis worked, phone 6+, watch allupdated fine. Pro 12.9 stuck in recovery, trying itunes didnt work. Store had to reset the firmware it was so corrupted. Just now, OTA update on empty ipas (what did I have to lose lol), and it took 10. min to download and 15 min to load and reboot. All is well, except for some lost screensaves in photos and a few local docs.
