iOS 15 has been safe dating back to the betas, but if there's a specific oddity to your workflow you're worried about you should ask about it.
I just have lots of Apple products and don’t want any issues with them interacting with my phone - Apple TV, Watch, CarPlay, AirPods and HomeKit - stuff like that. I haven’t had capacity to look up if there are specific issues, but it seemed like 15.0 was kind of a **** show.
 
I thought that Apple was going to be supporting iOS 14 with security updates for a period of time for users who did not move to iOS 15 right away? Is that not a thing anymore? (Users on 14.x below 14.8 now have nowhere to go except 15, if I am reading this right.)

No, users on iOS 14.5 and above can still update to iOS 14.8, because Apple introduced a new mechanism called AlternateSU (Alternate Software Update) that allows OTA updates to 14.8 but not restores in iTunes/Finder, therefore blocking downgrades while still keeping 14.x supported for users who are not ready to update. But this also means that if your phone bootloops, you have no other choice than to update to iOS 15.

On iOS 14.4.2 and below, you can only update to iOS 15 as the AlternateSU mechanism didn't exist yet (unless you use the delayed software updates feature meant for enterprise managed devices, which works in a very similar way only allowing upgrades and not downgrades: https://support.apple.com/guide/mdm/managing-software-updates-mdm02df57e2a/web)

What about upgrading to iOS 14?
If you're on iOS 11.3 or above, you can technically use the delayed OTA update mechanism I mentioned above to do that, but it requires supervising your device with Apple Configurator 2 or iMazing and installing a configuration profile. This is mainly meant for enterprises.

For the average consumer, this is not an advertised feature, the official answer Apple would tell you is "if you haven't updated to 14.5 or above already then you can only update to iOS 15".

No, they're correct. The 14.8 OTAs are not signed in the usual way, they require a special certificate that's generated by the Secure Enclave Processor (SEP) for Apple's servers to authorize the update. These certificates contain a unique device identifier and a nonce and expire in 3 days from the time of the request, therefore it's not easily possible for ipsw.me to track its signing status without someone manually replacing the certificate every 3 days.

I must have misunderstood their previous comments. I thought Apple wasn't forcing updates to iOS 15 and allowing people to role back to 14.x. So, can you not role back to 15.0 but you can role back to 14.x?

You can stay on 14.x and update to 14.8 from settings and get future security updates, but once you update to iOS 15 or restore your device from iTunes/Finder you cannot go back to iOS 14 anymore. See my earlier comments for some technical details on how they accomplished this.

I trust you. I just thought I heard people praising Apple for making the update flexible. Which it sounds like they met objections halfway.

I wasn’t sure if you and @TheYayAreaLiving had something specific in mind. I’ve noticed more force closes than I had on 14 (iOS hides them well) and I also do not like how buttons look/act in Safari now. Other than that and the ongoing struggle with maintaining a solid signal…15 hasn’t been the worst I’ve had.

On a related topic, do you know if a S6 Apple Watch on watchOS 7.6.1 can still update to 7.6.2? I tried this with my iPhone 12 Pro after updating to iOS 14.8 and the S6 would not update. It said the iPhone had to be updated to iOS 15. I assumed the watch is looking for watchOS 8. This struck me as odd since I assumed Apple would allow the watch this security update given the phone is allowed to remain on iOS 14.

Does this version use my CPU and battery to scan my photos to enable Apple to do its mass surveillance since they're too cheap to do it with their cloud resources?
Apple will do that, quietly. You can’t avoid it, one way or another.
iOS 6 forever. The later trash sucks and is not needed.

iOS 15 pre beta 7 is still iOS 14. After beta 7 it is iOS 15.
