Phones would be much larger if they had to have socketed RAM, SSD, CPU etc. And if people upgraded their phones themselves, Apple would just increase the price to offset the lost revenue, making an already expensive phone even more expensive.
How do you upgrade an iPhone?

Aren't we forgetting Apple is a closed system ? Apple may have limited it more than they did n the past, yet we only focus on that one part,, not a whole either.

Apple never allowed users to uninstall Safari as far as i can remember on iOS, so that is kinda dead question anyway.

WHy all of it is suddenly becoming a issue NOW, who really knows.
 
Then you misunderstand the model.

Apple make themselves the only repair option available (actual or perceived)

Then they quote repair charges as almost the cost of a new device and ask "but why do that when you can just upgrade to a newer model for a little bit more"

And then the kicker: "BTW we'll take that useless broken device off your hands and '''RECYCLE''' it for free..."

Congratulations on your new purchase and helping the environment! And it only cost you several thousands of dollars instead of replacing a broken cable for a few dollars...

When my sister’s out of warranty MacBook had a broken cable they fixed it at no charge.
