just about to download 3.1.1 a it's available to public now...hope this fixes the issue of the watch just randomly switching off
 
I have 3.1.1 beta 5 waiting for me. Can I bypass that and get to the release version? Or is it the release version, a la iOS?

just go to your apple watch app and go to general and clicking software update will download. so far i'm happy...my apple is yet to switch off on it's own yet.

That's the release version. You already had it and didn't know it!

Yep as others have said, beta 5 == release version.

I subscribe to Apple's Developer news RSS where they post build numbers of releases and you can see that the build number matches:

I have beta 5 waiting to be installed but now it says it can't be verified. Is this because Apple pulled the update? I also now can't install new apps to the watch because it says an update is in progress. So stuck here at the moment. :(

If I have 3.1.1 waiting, will 3.1.2 pop when it is available or I will need to install the former first? I don't want to risk bricking my Watch as I don't have Apple Care +

Do you have a Series 2? If no, then no issues with bricking. If yes, you're still under warranty. Once they say its ok to install 3.1.1, I'd do it.
 
Over the last couple of days I have had a couple of issues with my AW2 on 3.1.1:
The activity rings disappear (I use the activity digital face); and
Today as I started my workout it was not updating calories burned in the workout app. After about 11 mins it suddenly kicked in. Fortunately it had been counting the calories so the number was around where I hoped it would be.

You cannot update to official release from a developer version via OTAs. You will have to remove the developer profile and then you can install official versions. It doesn't matter because the last beta and official release are always the same. The next update you will get will be 3.1.2 Beta 1
 
Oddly yesterday, my Watch ran all the way down and ran out of battery. Did nothing special, so not sure what happened. Pretty (but not 100%) certain that I started with a full charge. I will definitely have a full charge today and see if it happens again. Of course, I got it last Christmas, so the warranty is over...
 
Power off usually takes care of that. I normally wake with 96% battery wearing it overnight. A week or so later, I wake up to 87% or similar or I notice an unusal drain. Power off and back on during my next recharge and everything is normal.

I just can't trust all apps for the Watch. I notice when it drops faster than normal that my usuage goes up so something is causing that.
