Those persons you are arguing with are part of “the people”, including me. “We the people” do not normally argue that we want to make it “inconvenient for the end user“.The world belongs to the people. Including the cooperate entities in it. That means, if there is a way to secure people to communicate more safety (and inconvenient for the end user), it should be implemented. If companies starts to whine about (like Apple), "We the people" should force. Looks like the EU is the only legal entity to take this seriously.
It is not your responsibility to secure your phone to the most modern standards. You can expect people to understand encryption and over-all cyber security. Your expert bias is playing you a trick here.

Adding optional security extensions to SMS is fine, but not everything needs to be secure, so orphaning older existing SMS devices by disabling basic SMS is probably the most wasteful idea I can think of. It is like arguing an armoured car is safer than a bike, so all bikes should be banned.

I am not preventing you from using iMessage or Signal, so go ahead. I have no desire to impose my worldview on you. If SMS itself goes away, that would be something different, but simply removing SMS from the iPhone while SMS still exists removes major functionality, as I would no longer be able to use it to contact my friends without Android or iPhones. It would be like removing the cell phone function because it is insecure.Security comes in various forms.... encryption, identity validation, etc.
Rather than "Secure" (as in encrypted) i'd much rather SMS die in a fire entirely and have a protocol that allows me to KNOW (i.e., identity validation) who is on the other end, rather than the number possibly being spoofed, etc.

Sorry, I'm not sure what you mean by your fallback comment. SMS already is the fallback in Messages.It's called fallback. The internet has been doing it since SSL became a thing.

I was being somewhat sarcastic, as your comment to Unregistered 4U seemed like an insult, and I think paranoia is far more suspicious than thinking SMS still has a use. I still have a use for SMS, even if you do not. The western world is indeed becoming horrible to me, as I watch people thinking they are freedom fighters try to impose their views on everyone else, apparently not aware that far too many freedom fighters ended up as dictators in the end.
