Considering the price hike of the 8 and the minimal upgrade over the 7, it makes no sense not to pay more to get a X or just get/ stick with the 7.

I mean if you're on a 128gb iPhone 6/S/7+, and don't want to drop down to 64gb storage, you have to pay £949 for 256, at which point why not just go all in and pay £1,149 for the X and get the new design etc. Maybe for regular 8 users the slightly bigger saving getting the 256 model might make it worth it, but again, near minimal upgrade over a 7, which can still be had for less.

You portray the differences between the 7 and 8 to be small, but the differences between the 8+ and the X aren't really that big either. The screen is the most obvious difference, which isn't necessarily better all the way around in the first place because it's got a big notch in it. The camera is truely a marginal improvement over the 8+ as well. Then you have FaceID, which isn't much more convenient than TouchID, which was already incredibly easily to use. Arguably the only reason FaceID came about is because of the inability to move TouchID underneath the screen.

As far as 8 vs X goes, it's a $300 or 43% price difference, which is huge.
