Many fixes and changes aren't listed in the release notes.
Makes me a bit more hopefull that the the 10.15.6 supplemental update might include a fix too! I hope, I hope…
I'm sorry having to disappoint you, but I just got my first WindowServer-KP only minutes after installing the supplemental update.
Screens went unresponsive (even the clock froze), but I was able to move the mouse cursor for about 2 minutes. After that, fans spun up and it restarted.

MacBook Pro from 2019 it seems?
Very similar to the one I get on my MacPro5,1 (which isn't officially supported by Catalina, I know, but it works fine except for this Kernel Panic) with an AMD RX 5700 XT graphics card. Wonder what's going on here…
Have you tried a clean install of Catalina?
I think I will try that if the KP happens to me again.
It is so strange, because I know of people who also use Catalina on the same MacPro5,1 that I have and they haven't seen this KP.
Maybe it is hardware related in some ”hard to find” way?
Is there any way to verify whether a SMC and NVRAM/PRAM-Reset actually took place?

I know, just figured that—between the reports on Apple's discussion forums, here and elsewhere—it seems like it'd be a big enough problem to rate a mention. My perspective is skewed a bit, obviously, from being the kind of person who checks these places for reports.
It hasn't fixed the issue for me. In my case, it's Parallels Desktop 15 (and now 16) that freezes the screens, crashes and then reports the WindowServer issue as being responsible. Even the latest version of Parallels Desktop 16, released earlier this week, continues to be affected by the issue.
My watchdog panics are related to the Google Drive File Stream app and the 10.15.6 supplemental update does not fix it for me. Same issue. The workaround of adding a Spotlight exception for the GoogleDrive folder prevents it from happening. However, as soon as this is removed again the panics start almost immediately.
I installed the Supplemental Update. This morning, for the first time in weeks, I woke up and my MacBook did NOT report it had rebooted overnight, and the Console app lists NO new crashes. (I am not using Paralells or other VM tools.)
I was getting errors like this, not related to WindowServer
I get the crash when shutting down the laptop at the end of the day.

Last crash did not even give any error message. Screen went blank, touchbar was lighted up for many minutes, then it rebooted by itself. There was no crash report when I logged in. Great job apple, bury your head in the sand now.

I have done a clean install of Catalina 10.15.6 (19G2021) in a separate APFS volume on the same drive where I have my original Catalina install, and I still have trouble with waking the computer from sleep. Kernel panics with ”com.apple.driver.AppleSMC” in the log (similar to your log above) and also a few occasions where my main display (I have two connected to the computer) stays dark and the second one is turned on, but only shows me a spinning beach ball – can't do anything. 🙁
At the same time all this is on a MacPro5,1 which isn't officially supported, but since the problems I have are similar to those with supported Macs and since it seems not all with MacPro5,1 has the ”watchdog” Kernel Panic I am really curious as to what is going on here. I'm repeating myself, but I have no similar problems when waking my work computer which is a 13" MacBook Pro from 2018, so it seems it's not affecting everyone – I think we'd hear more about it if every Catalina install was suffering from it.

It's absolutely ridiculous.
I have a bunch of MBP 16 inch for dev purposes, can replicate across them.
I'm now able to replicate every time.
No screens, in-fact I've never plugged anything other than a charger into these machines!
No virtualisation software, I have Xcode and that's about it. No weird or wonderful docker/dev tools.
Here's a video of me causing the panic on my system that was up for only 53 seconds, about 3 minutes ago:
So basically:
1) boot computer running latest Catalina 19G2021.
2) reboot within a minute of booting and see KP.
I cut that video short because it takes about 6 minutes to KP, but the spinner eventually goes and the fans blast for a second, then boom KP.
I didn't even launch an app. FWIW, I only get KP on reboot, never during use. I don't see this issue on my 15inch MBP.
UPDATE:
I produced this KP about 15 times in a row. I reset NVRAM and since then I can't reproduce.
It will come back, it's all software related.

I had this issue for a while and started running Caffeine and start at the time of reboot. And do not see a crash since. It's been over a month now. I am on a 2019 MBP 16". I shutdown the box every night and been working well. Since I started running Caffeine, Fan runs very quiet and only during some heavy CPU intensive jobs I hear the the fan sound.
So please try running Caffeine.

This issue is related to sleep / wakeup and there are some other contributing factors such as external monitor. Caffeine prevents computer from going to sleep. I had a ticket open with Apple for weeks and did not go anywhere. And my system would crash at least twice a day with no real pattern. So this and it seems to be working.
In my case, there is no problem with sleep/wakeup. I get the crash when I shutdown.

Have you tried what I suggested previously which is create a new partition on your internal drive and clean install Catalina to the new partition, reboot to the new partition and see if the shutdown issue still happens. This way you can verify if it is the OS or something related to third party software you have installed. When you are done, restart back to your current install and remove the new partition.

Probably downgrading to an older version of macos might be needed.
Since in my case, crash only happens on shutdown, it is not severely affecting my work. So I am waiting for an update to fix this.
