I never buy Apple Care. It's insurance, and it's not insuring me against an impossibly large expense so economically it should be cheaper to avoid it in the long run.
I buy health insurance, and car insurance (mostly because of the liability coverage) because bad luck can hit me with expenses I can't sustain.
On a consumer electronics purchase I'd expect it to cost me more than it's worth-- and if it doesn't then there's a quality issue with the device and I'm buying the wrong product.
