The AW is not listed as an Airplay device in this Apple support page
https://support.apple.com/en-us/ht202809
However you can control music playing on your iPhone from AW and your iPhone can output to a Homepod on the same wifi, using Airplay:
https://theapplewatchtriathlete.com/blog-1/2018/2/11/using-apple-watch-to-control-homepod

The Homepod does not have Bluetooth and so can only talk to other devices with Airplay, which is not (currently) available on the AW

It has Bluetooth 5.0 but whatever reason is ‘turned off’ by Apple ATM; hopefully a software update in the future enables it?

Why would you want to use the HomePod to stream from your Apple Watch? You're at home in range of the WiFi: use your iPhone?

You can always use the watch as a remote to control everything if you don't want to use Siri on the HomePod. (and again: "Hey Siri, skip this song" is way faster than using the watch, so why bother using it)
