I only have iTunes, Firefox and Adium along with the Applications stack. I prefer a smaller dock. :D
 
I'm so surprised no one's mentioned DragThing.
I guess you don't need it if you only want six or seven apps in your Dock. But I like to have instant access to approximately 100... the genius of DragThing is that your dock is actually many docks, with folder-type tabs that allow you to switch from one to the other.
All of this takes up no more space than Apple's Dock.
So, for example, my first dock is for my main applications (iTunes, Safari, Mail, Address Book, etc.), my second dock is for documents I want quick access to, my third dock is for my maintenance apps (including Cocktail), my fourth dock is for my Adobe apps, and my fifth dock is for my editiing apps.
It's a work of genius, in my opinion.

1 way i did it, was just make aliases of all the application into a folder called Apps

2 install your apps (if possible in a new folder; Apps)


the aliases work like a breeze that way you dont have to get confused with where everthing is installed, th eonly nit picky thing is hiding that shortcut/alias arrow.

Only the one's I use the most. If I use it every day, it goes on the Dock. I keep the Dock at it's smallest size and use the magnification feature.
 
16 apps (including Finder), 5 stacks, and the trash.

I have nine applications and five folders on my Dock, and that's how my Dock is setup full-time. Obviously, other applications will add to the Dock, but they only remain when the app is in use. I take advantage of Stacks to launch everything easily enough, so I don't see the need for so many apps on the Dock.

Before I got my Macbook, I was always in love with the Dock. Even though it's a waste of screen space, I love it and I like to keep it. I originally had it MASSIVE with stuff, but I've cut it down a bit.

I tried making my dock really small, but, I just felt like **** afterwards (I have no idea why), so I put mah stuffz back in.
