Just to nitpick, an iPod is not a Mac. Anyway:

Macintosh (128k)
Mac Plus
Quadra 630
PowerBook 2400c/180
PowerBook G3/400 Pismo
iMac/266
PowerMac G4/400 Sawtooth
PowerBook G4 Titanium/800 (DVI)
dual 2.0 G5 PowerMac

and hopefully soon the next iteration of the MacBook Pro!

Performa 5200 (All-In-One, 603 @ 75mhz, RAM upgraded to 64Mb, w. 1.3Gb HDD) - total garbage of a system, doesn't really have much use and does what little it can very slowly.

PowerMac G3 DT (G3 @ 300mhz, w. 256Mb RAM, 6Gb HDD) - Not used very much now, but sits in the corner running Tiger... I won't say "happily" however. ;)

PowerMac G3 Blue & White (G3 @ 350mhz, w.512Mb RAM, 6Gb HDD) - I use this system a fair bit, for light use.

2x iMac DV (Summer 2000) Indigo (G3 @ 400mhz, w. 512Mb RAM & 6Gb/10Gb HDD) - Used occasionally for light use.

iMac (Rev. D) Grape (G3 @ 333mhz, w. 160Mb RAM & 6gb HDD) - rarely used.

Mac Mini (G4 @ 1.25Ghz, w. 512Mb RAM & 40gb HDD) - a secondary Mac, used occasionally.

PowerMac G5 (June 2004) (Dual 2.0Ghz G5, w. 1Gb RAM & 160Gb HDD) - my current main system!

HiRez is right, iPods can't count.

Let's see here:

* 2 LC III's
1 6100/66
1 7600/120 with a G3 upgrade
* 1 5500/225
1 B&W 350 with a G4 500 upgrade
* 1 PowerBook 3400c/180
1 PowerBook Wallstreet/292
1 PowerBook Pismo/500
* 1 iBook 600 (16 VRAM)
*1 Sawtooth with a 1GHz upgrade
*1 eMac 1GHz
1 iMac/400 Indigo
*1 Beige G3 MT/266 with a 350MHz G3 OC'd to 366

I still have the starred ones (for now, until my auctions close, and the 2 LC III's have been frankensteined into one with the other hanging around for a parts machine) and I'm going to add either a closeout iMac G5 or a Core Duo as soon as the cash comes in. :D

Pre-G3 Powermac, dunno what kind (never turned on!!)
G3 iMac 333Mhz (never really used though)
G3 iBook 600Mhz (in parts)
G4 eMac 1Ghz Edu (running headless)
Core Duo Mac Mini (on order)

Plus an iPod mini and an iSight on the way!!

All these...

Plus a PowerBook 1400cs, a PowerBook G3 (Lombard), and a beige G3 desktop out on loan to others, plus a Newton 120, a 3G 30 GB iPod, a white iPod nano 2 GB. And there's a printer or two not pictured, and both an AirPort Extreme (with modem,) and an AirPort Express. (In the post, he said 'Apple products', it's just the title that says 'Mac')

You said 'ever', so the ones I no longer own are:
Apple IIe
Classic II (has since been replaced, see pictures)
PowerBook 3400c
beige G3/233 desktop (has since been replaced, see pictures for MT, plus unpictured desktop)
iMac rev.b 233 MHz (has since been replaced, see pictures)
iPod shuffle 512MB (was replaced with the nano)

Whoops, hit the attachment limit. See second post for more.
