Mine just rebooted a second ago. So 4 days since the last reboot. I wasn't even doing anything. I didn't touch the watch I just saw the Apple logo pop up on the watch while I was typing at my Mac.
Well, you COULD tell if it has rebooted at all as it takes longer to launch an app the first time after a reboot. It could have rebooted more than once, but as long as your previously started apps start quickly, it's not rebooted.

I've today's software update installed now. No crashes since the update but I did t wear mine today until this evening.
Heh! I didn't mean to shout, I wanted to emphasize that one could tell if it had rebooted because it takes a bit for an app to load into memory after a reboot, but once it's in memory, the next time you start it up it starts faster because it is already in memory. The "could" was meant to be "you probably can tell, but it's a sort-of subjective thing that may or may not be noticeable to you, depending on how sensitive to application start times you might be" but in one word.I have NEVER noticed much delay, even after rebooting.
Note I upped your caps with BOLD!
My Nike AW Serie 2 rebooted around 2 a week. Apple support told me to disconnect the watch and reconnect again. After doing so, I don't have that problem anymore.
It has been 2 weeks now for my series 2 with no crashes. That's a record for me!

Perhaps the new update remedied that issue. How many crashes were you experiencing on a weekly/daily basis?
Crashed today at 2 weeks, 4 days.
My phone made a "ding" sound and I turned my wrist to see the notification and it rebooted. I did not physically touch it or interact with it and I still don't know what notification i missed.
