Acronym beat me too it. You basically can hide all the unwanted apps with an Infinifolder style -- without jail breaking. The downside is that you can't access those folders within the main folder, BUT you can drag them back out to your main springboard.
Here's my idea: treat the Apple apps like every other app and make them deletable and put them in the App store so you can redownload them if you want. very easy and elegant to me
