I wish Apple would make something like this that was compatible with the extension cable.

You mean the extension cable that slides into the charger to make it a pregnant snake? Try one of these two:

(I used a hacksaw to remove the big ejection lever to make it much smaller)

and add this to the one you carry in your laptop bag:

Mine is powering both a 16" and 13" MacBook Pro at once and has plenty of juice for the other 2 ports.

Is this GaN really a thing? Or is it just the charger equivalent of L'Oreal "Nano-Enzyme bead" nonsense?

If so, how come this company is the only one that seems to have it? Considering it mentions Gallium it probably refers to some kind of semiconductor (probably the main switching transistor, or perhaps the rectifier bridge) and this company seems way to small to manufacture semiconductors on their own. And if they buy them, they will be available to others too.

GaN as a material that can allow for smaller power transistors is *somewhat* real.
In theory it should work, and a variety of companies sell GaN-based power bricks today. You pay a little more (today not that much, used to be a lot more two years ago) and you get a rather smaller power brick:
Here's a range of what's on Amazon:
https://www.amazon.com/s?k=GaN+charger

BUT if GaN is so great, why isn't Apple, of all companies, using it to shrink power components for its various devices?
Why indeed?
And that gets us to the "should work". In practice GaN devices have so far tended to have short lifespans (say two years or so) then they mysteriously die. That's why as you move up the stack of "companies that care about their brand image" you've seen less and less usage.

But over the past year the details appear to have been sorted out. I'm now seeing more high-end companies like Anker offering GaN devices, and the rumors are that Apple's laptop chargers this year will be GaN. Maybe those were more or less ready to go at the beginning of the year but Apple wants to make a splash with the ARM MacBooks? So they're not just cooler in terms of maybe slightly smaller, probably a lot faster, but ALSO look how sleek and small their chargers are :)
