I use my Graphite every day at home as well as at work. It's the 466Mhz FireWire model, so it has all the bells and whistles. I've upgraded to Tiger, a 120GB hard drive and 576MB of RAM. I regularly run Firefox, Mail, iTunes 8, Photoshop CS and a VNC connection to our Windoze network via Chicken of the VNC and airport. In fact, that's what I'm running right now. It still works great with the old Graphite Base Station. The biggest limitation I have (besides speed) is the 800x600 res I'm stuck with. I really wish that I could see the WHOLE webpage at once.

The speed affects video, and GarageBand skips on me quite a bit, but all in all it's a great little machine. I've been thinking about an upgrade, but right now I don't want to make the investment in a newer machine.
