A few more observations playing around with this in the last few days

1. The "From" Aliases do appear on older iOS and macOS. It just takes a bit of time to show up. You don't need iOS15 or the beta iCloud page
2. Removing and then adding an email in your domain doesn't make that email show up in "beta.icloud.com" from or aliases, but shows up on iPhones and macOS and you can send emails from these IDs. --> Reported via Feedback assistant
3. If your Apple ID was your custom domain email and then you add that email in custom domains, too, you cannot send emails from this address --> Reported via Feedback assistant
4. If you're forced to make an "@icloud.com" email just to get this to work, you can easily disable it from bothering you. Just go to "https://beta.icloud.com/mail/"-->Settings-->Composing-->Send From-->Uncheck the iCloud email

1. For me, after 3 days, I still can't see aliases in "From" section.
3. I have my main mail as custom apple ID, so I hope that I can switch it from FastMail to iCloud and normally use it.

I am not sure exactly when the aliases appeared on my phone. I just noticed them today, which is definitely more than 3 days later.
For 3, I changed my Apple ID to something else and then added my main mail again and I could send emails from it then.

And aliases apeared you mean that section? Because when I click on aliases in Apple Mail in macOS it redirects me to web.

Basically just the mail app in iOS and macOS started showing the “from” drop down when composing new emails with my custom domain emails there.

This does seem promising, but I am not sure that I am ready to move my main email domain over just yet, especially as it is my Apple ID and I have a few aliases on there. However, it will be perfect for my sons who just have their name@fullname.com email addresses forwarded to their iCloud addresses, as I thought it was overkill to pay for full email hosting for them.
 
I still can't configure outgoing email. I can select it on both iPhone and Mac, but only from iPhone there is also my name, but when I send mail from Mac, there is only my email and I can't configure it.

The odd thing is this was working at first, but then randomly broke so they changed something.
 
Well, looks like now I have 20 aliases in my email list, all the aliases I added and removed from my custom domains over the last few weeks.

No, doesn't take that long. Can you send a screenshot of your entries, you can mask the confidential bits.
 
Problem is, that I needed to change DNS server first and its takes that long.
If you are also changing your NS records, that takes anywhere between 24-48 hours. Sometimes even more. You can check here

Thank you. It looks like propagates now, but Apple verification still wont work.
 
Btw. are you able to send email from macOS with your name and not just with email adress? From web client, iOS and iPadOS it works fine, but from macOS I'm still sending only "raw" email address.

For me on iOS and macOS, the email addresses appear raw, without the name. I don't mind, because when the recipient receives my email, they see my name.
