I moved my trusty X25-M G2 into my 2011 MBP and ordered a new 320 for my Mac Pro.

That's a pretty good idea. I'm going to see what the $/GB of the new OWC 256 (240) GB drive will be compared to the 300 GB G3.

There is according to this Anandtech review.

Intel sent a 300GB version of the 320 for us to take a look at. Internally the drive has 20 physical NAND devices. Each NAND device is 16GB in size and features two 64Gbit 25nm 2-bit MLC NAND die. That works out to be 320GB of NAND for a drive whose rated capacity is 300GB. In Windows you'll see ~279GB of free space, which leaves 12.8% of the total NAND capacity as spare area.
 
I would say yes. The 120GB they switched to 25nm became a 115GB.

Yeah that's what I thought. Man, G3 would give you about 45-50 GB more for about the same price or less. I guess I'm just going to have to see the prices on OWC's new drives whenever they get here.

Hmmm, well I'm glad tese have come out as it means I shall be buying the Intel 510 as it will work with my 2010 model and my 2011 model when ever I get it.
But in the 2011 models do the 510 work at full SATA 3 speeds now? In the 15" models. And what garbage collection does the 510 have?
 
Wow, Newegg is out of stock already! And they are limiting orders to 1 per person. These might be very hot items and hard to find for a while.
 
The pricing on these is weird. Around here, the 300 GB version of the 320 costs almost exactly as much as the 250 GB 510. Why would anyone get the 320 at these prices?

I have a 15 2.3 and just installed the Intel 510 and it is clearly Sata 3. I also added the TRIM hack that is floating around here. You can see TRIM is enabled. Running well too

I am thinking of doing the same thing... I have a 2010 MacBook Pro however... How easy is it to install the SSD in the MacBook Pro?

Here is a step by step video. You will need a #00 Phillips head screwdriver to remove ten screws from the case and a Torx #6 driver to remove four screws from the old drive and reinstall them on the new drive.

Yes it should with no issues. I have one myself and I know folks go after the e-bay units to save money. I say don't , OWC is very nice and well designed and fits really nice in the system.
