I didn't really use the Game Center, other than a few games I play fairly often store my configuration and progress info there. I installed the beta as an update, and my settings, user data, and progress are still intact -- but it would disappointing if I did a 'setup as new' iPhone and installed those games and had to start all over again

I'm inclined to agree. I'm sure there was a mention of Game Centre for the other OS's during the keynote. I maybe wrong and they might have mentioned GameKit.
The lack of it in beta 1 doesn't necessarily mean its gone for good. Later betas may add it back in.
It's only been a few hours, but this is by far the most stable iOS beta Apple has ever released at WWDC, like by 100's of miles. I have yet to find any kind of glitch, lag or crash.
Maps has been doing this for me for years. Whenever I go on a trip, Maps seems to purposely take me off the highway when it can, specifically to avoid tolls.Avoid tolls

Apple points out that deleting stock apps doesn't free up much space as they don't take up much space, meaning that's not the reason why they are providing it: http://support.apple.com/HT204221deleting some native apps

UPDATE: I can confirm that the app isn't actually deleted and in instead hidden. You can test this yourself by having the Maps AppStore page open, delete the Maps app, go back to the AppStore page and see the cloud-like download icon, turn on airplane mode, still able to download the app instantly
