You are missing a lot without iOS 11 on the iPad. This update is the most important one to date for iPad.
I did install iOS 11 in my IPP 9.7, a while ago (before selling that device). So I know what iOS 11 looks like. Didn't like the fact my battery life was reduced *, and a few changes like this one:

To be fair I think these numbers might adjust themselves over time, with more accurate readings or fixes, since my IPP 10.5 already has 10% degradation since it was first used 5 months ago. And it's still using 10.3.2. What I fear about iOS 11 is the fact that (correct me if I am wrong) it ALWAYS uses more battery than iOS 10 regardless of the situation, thus accelerating the need to replace your iPAD battery (I always thought this was a ploy from Apple, I never trust them to be ethical), which I think it's not as easy as it is for iPhones.
Perhaps:
1) It can't be replaced, especially if it's a new model. Maybe you can only do it in old ones, like the iPAD 4.
2) The new battery is (or could be) expensive;
3) There's a risk of something going wrong (while replacing). Why? Because Apple devices are notorious for low repairability scores:

If something happens I won't buy a new iPAD just to replace my used battery. And since I am in a third-world country I don't expect a new battery to be cheap (unless it's for the iPhone) or Apple to replace my old device for a new one for a small fee, after the 1 year period.
Another reason I am not going back to iOS 11 and won't ever do this again is due to not being able to reverse these changes, by installing another iOS version. Only when Apple allows us to do that (which will never happen) I'll think about it.
The changes they did concerning wi-fi/bluetooth are in my opinion detrimental to our health (EMF radiation *), I want to be able to turn them off easily when I feel like it, and these days I rarely use both.

Apple wants to impose these things, also by removing the headphone jack from new devices. I sold my Airpods and went back to use wired headphones.
I rarely use the internet, or don't let it ENABLED/CONNECTED most of the time. Apple was never concerned about giving users more options, more freedom, it's all about feeding their megalomania, all about being a control-freak.
For God sakes, we can't even say no to these new iOS versions!
Over time the updates are downloaded without our consent and accidentally we may hit OK and install them anyway, because they keep pestering us about it. I had enough of these antics.
My advice? Install the tvOS profile and block new updates. I don't get this "urge" to always install them. When are they going to stop? Why do you think there's always something big to be fixed or added? There's a catch in everything they do.
