Sounds like you're doing the process correct (although no need to update iOS on your old iPhone first). If you're losing eSIMs then maybe try a local backup to your computer, those are more comprehensive than an iCloud backup. When you fire up your new iPhone, there is a step in the process where you can choose to load a backup from your computer, not iCloud.Many thanks for that information, I wasn’t aware of that.

In the past I updated old iPhone to matching iOS on new iPhone, uncoupled Watch for backup, then made iCloud-backup of old iPhone and restored new iPhone from that backup and paired Watch and restored from backup.
I’ve always lost my eSIMs and had to contact my carrier and set them up again which is a nightmare.
Now I’ve seen people praising Transfer Data as it would be a better option and include eSIMs.
So I’m a bit anxious of Friday which is silly because I’m really happy about the new iPhone in purple but totally unsure how to deal with it.

The Transfer Data process may help, but IIRC that only does the initial setup of the new iPhone -- transferring your account information. I could be wrong, maybe it transfers more than just your account details and includes what is in your backup, but I suspect not.
