Notifications for sure. It will be such a relief to not have that annoying pop up anymore.

Also the new music app for iPad. With the way the controls are placed you can use it while gripping both sides of the device now.

And i would like to add the Nuance voice technologies which is reported to be added as well.
 
Is no one liking the GPS based reminders - i think this will be really handy!!

Imessage doesn't interest me that much, as on my plan its 100% free to text everyone!!

The Naunce text to speech seems handy for when i feel too lazy to type! haha!!
 
I will say, I have used the betas on my iPhone, and the features I'm most excited about will benefit my iPad the most. iMessage bc it will connect me up with the my family of iPhones. Also, notifications are certainly better. They will come in handy with iMessage coming in iOS 5. Tabbed browsing will also be nice. I'm mostly looking forward to jail breaking iOS 5.
 
There isn't a new beta that allows you to hide apple apps. Beta 7 is the last one out I believe GM is more likely next.

I'm liking the notifications best. iMessage is turned off until everyone else gets updated to ios 5. Wifi syncing and iCloud are also a plus for me.

iMessage isn't turned off, it just only works between iOS 5 devices. I use it numerous times daily.
 
What I meant was its off on my device since I don't know anyone else with the beta. Oops :)

I'll start... The ability to turn off all animations. I miss that feature from Android SO much. It basically makes your whole experience 2x faster. Whipping out your calculator app never seemed so awesome.
 
SBSettings type controls in top of notification area (or some sort of fast way to turn on wifi, gps, etc)

#1 reason to jailbreak

Better PIM apps. Better Exchange support, with support for categories. Calendar app should support links, attachments, allow to decline an appointment with comments, have a week view, templates, copy & paste, etc...
Another thing I would love to see is real background sync for (user) selected apps like Omnifocus.
 
Ability to hold and press volume button anywhere (including in an application, in home screen, in lock screen, and in sleep mode) to change music or video track. Ability to press and short hold the home button anywhere (like before) to start and pause the last played media program (be in the music player, internet radio, youtube, or whatever).

Currently, I must jailbreak and use Activator to have the above functionality. That would be my #1 wanted feature.
 
White balance for the camera! and for the camera and video camera to load instantly. Im sure the A5 will allow the iPhone 5 do that like it does for the iPad 2
 
Wireless syncing and new notifications are the things I am most looking forward to. iMessage isn't exciting me that much as I have Whatsapp which essentially lets me do the same thing as iMessage, but with people who have iPhone, BB and Android.

How come nobody has released a hack for this via Cydia?
 
Ability to sideload uncensored code, or a new policy that anything that isn't demonstrably illegal will be allowed into the App Store - either approach would do.

A file system is a very, very close second.

What do you mean by animations? As in where do you normally see them?

I'm pretty sure I see them every time I use my phone but just haven't realised they're there. Thanks.

Scrolling screen when you swipe, apps expanding when opened, the screen sliding up when you view recently run programs etc. All the nice "pretty's" that do make the phone great to view and use, BUT do make things slower to occur.

This is fine while you have an abundance of power (i.e. not battery), plenty of processing ability, and dont mind the slight speed degredation for a slight increase in user interface looks.
