Would you know if one needs to physically remove the sim to.get 5G on the esim line or can it just be disabled in settings. I read a Verge article stating the sim needs to be physically removed to get 5G .

I am not certain about that. Only the other way around.
 
What are the benefits of eSIM vs traditional sims for devices? Especially for those that still include traditional SIM card slot anyway.

Dual SIM phones bought in China with two SIM card slots don’t have this problem. I understand esim for watches or single-sim devices but it seems like this issue could have been avoided with minimal fuss by replacing the esim in the iPhone 12 range with a physical sim, worldwide.
 
seems its not only the iPhone 12 with these issues, Pixel has same issues.. I am sure there will be firmware update at some point..

Esims offer some advantages. If you travel a lot, you can keep several in your device, and activate them as needed. A little easier than physical sim swaps.
