This is like how car manufacturers replaced actual tactile buttons with touch sensitive controls which make them difficult to use while driving. I hope they keep the buttons.

First and foremost, a mandate (forgot which gov't agency) in May 2018 stated that all vehicles created then and after that point must have a backup camera. This means the console MUST have a display, so that'll eat up a fair amount of space alone. Another is with all the fancy "smart" and general computing stuff we have on our vehicles, these touch screens are something manufacturers love b/c it keeps the interface from getting too cluttered.
Myself, I was VERY tempted to get a car that was made from few years ago just so that I could have a CD player*, and more physical controls for climate/heat/air conditioning controls. However, I'd be getting only a few thousand $'s off, on a vehicle that had 10K miles on it. Nah.. I decided to just pay a little more to get this year's model.
Worth pointing out that I know someone with an Audi where the display pops up from above the dashboard (that flat area where you can place objects on), and NOT the console/dashboard area. It's too long to reach out and touch, so you interact with it via a clickable knob you turn (like the crown input piece on an Apple Watch), they're not all (technically) touch screens!
* My current car does not have a CD player anymore. Yes, "we'll live", but it's no different than not having a headphone jack, no more mag safe, etc. These are all features that fans of them used a lot, so losing them is still felt
