It's actually Canon 42%, Sony 32%, and Nikon at 13%
Well, I checked another source and as of December 2023 it was Canon: 46.5%, Sony: 26.1% and Nikon: 11.7%, so sources can very, but it's pretty obvious that Nikon is #3.

Which bums me out a little, being a longtime Nikon User.

Being a longtime Canon shooter, that makes me happy 🤣

I had a 70D which I loved, at the time it was so fast, everything from frame rate to focusing speed, also had a 6D that was like the opposite lol. The 6D was what I used at night, as the 70D images were weren’t that great in low light. Ended up with a Sony A73 and realized how bad the dynamic range of my Canon’s were, images that were lost due to over/under exposure I could bring back with the Sony, to quote an amazing amount.

So my question is, are the new mirrorless Canons as good as the Sony’s dynamic range? I know they are insanely good at focus tracking and speed, just not sure if the iq stacks up to Sony or Nikon in that area?

I don’t want to get too off topic, but I really wish Apple would partner with one of the large camera companies to really improve their sensors and lenses. The terrible light reflections should have been fixed by now, for example.

Actually the current crop of Canon R mirrorless cameras like the R3, R6 II, and R5 equal or even exceed Sony sensor’s dynamic range. Sony’s AF is slightly faster while Canon’s AF is slightly more accurate. Sony has an advantage in lens range mostly due to availability of third party lenses which Canon doesn’t allow. Canon just started to address the issue finally allowing third party optic makers to build RF mount lenses.

If I want to create a “fish” album, I should be able to go into all photos and remove all pics of fish into the “fish” album.

If that's what you want then move to Lightroom classic. Move a file to an album and the file is moved from its original location to the albums folder on disk. There is an "All Photographs" option but that uses the Lighroom library to display pictures in all of the folders.

Albums in Apple Photos are just pointers to the files in the master library. Totally different design.
