Ordered a 128 GB 7+ in Matte Black on AT&T.......I also had trouble getting into the Apple Store app until 2:05 am CST. I chose to purchase using the Apple Upgrade Program, so it took a little longer with all the additional pages of info to input. I wanted to do an in-store pickup option, but it wasn't available at the two stores nearest me. I never observed an anticipated delivery date throughout the order process, but when I completed the purchase at 2:13 am, it had me in the 9/27-9/29 window.
I've had no movement or change on the order status of "Processing Items" or estimated delivery date.
I know its a 1st world problem, but I'm a little disappointed that this will be the first iPhone I don't get on release date (and I've purchased a new model every year).
