Yes, you can pair the Samsung Gear sport with the iPhone. However, it will be severely limited in capabilities, as its not iOS orientated.

I have one and using it with my 8plus. It sometimes disconnects and the weather won’t show up. Also, I can’t use talk using the watch only. The phone always picks up. I have used it with a G6 and it worked perfectly. So honestly if you love the watch stick to android. Or get an Apple Watch.

Would not recommend using Samsung Gear as it will limited capabilities.
