If you have an iPhone 7 and X compare the delays between the button and shutter trigger, you might be shocked at the difference

I grew up with birds. Amazon parrots and African Greys and sun conures. None of these were mine (my sisters birds). Why? I can’t stand bird that can bite. My bird of choice growing up were parakeets and pigeons. Neither can harm if they bite. Had a pigeon for 7 years and last year got a pair of racing pigeons from a local breeder as babies - hand fed them (wife and I did). We also rescued a cockatiel who is super tame now. Pigeons love to cuddle and hang around us as we work in the office. Their birdy diapers keep it clean. But yeah can’t stand birds that bite.

My bird (Solomon Island Eclectus) has bitten me hard, usually in situations like the picture taking. The vast majority of wounds weren’t from attacks but rather her trying to maintain balance and she catches me off guard and I pull my hand back and she clinched harder.

She attacks my feet then runs under the couch, surely playing but she gets me good every so often.

Some birds like dogs are m an and vicious.

My bird is cuddly, well at least towards me.
My wife will have some choice words to describe the bird and her relationship.
 
Portrait mode isn't going to be anywhere near perfect on phones. If you really need the blurred background then you will need a mirrorless/dslr. You are simply asking your phone to do too much. You have poor lighting, a subject with very difficult to define borders, and a subject that moves a lot. This is a recipe for disaster. Your phone simply cannot do what you desire at this point for your subject of choice.

Exactly. The smaller the sensor the more light it needs. Especially when using the tele camera which has a much smaller aperture than the wide angle lens.

yeah why should I expect portrait mode to take portraits. If i take a non-portrait photo it’s clear and even blurs the background slightly. this is a software issue

You do not know much about photography it seems. Just because it's called portrait mode does not mean it is going to be able to blur the background perfectly in every shot imaginable. There are even limitation to DSLR/Mirrorless cameras. An piece of technology has it's limits and you've found one of the iPhone X portrait photography mode.

Software issue which can be fixed. Other users are using apps like Focos to fix problems with images like the OP's.
It's not just down to limitations of the cellphone camera.
