I had this same problem with frozen restore screen. Tried all these suggestions and none worked. Then I tried this and exactly this:
Step 1. Turn off your iPhone/iPod (or if frozen hold power and home buttons to reboot).
Step 2. Hold down the power and home button.
Step 3. When you see the Apple logo, release the power button but continue holding the home button down.
Step 4. Open iTunes immediately. You should then be prompted to plug your iPhone/iPod into iTunes. Do this if you haven't already got it connected.
Step 5. iTunes will then tell you that it needs to restore this iPhone/iPod. Agree to this and hit the restore button in iTunes. iTunes will download the restore package and install it.
Step 6. Now this failed for me at this point. It got about halfway through the install and then I got a message saying the iPod
could not be restored and iTunes gave me a big massive error details thing in Textedit. However, I switched my computer off and on and tried these exact steps again. This time it worked fine. iPod restored and latest OS installed.
Give it a go.
