Well, of course it depends on what you're using it for, but I got the 16 GB version for myself because I am planning on streaming nearly all of my media, be it at home or away. At home iTunes home sharing can access all of my music over the network, and away, iSub (a Subsonic client) streams my music over the internet. I'm at work right now with my 16 GB Wifi only iPad tethered to my Captivate and streaming music from my home computer.

As for video, I haven't gotten to play with it enough to make a final decision, but I do have VLC Streamer set up right now and it seems to do a pretty good job of streaming anything I have on my home network. As for streaming over the internet, I have worthless Time Warner, so I get about 256 Kbps upstream, so I haven't bothered. I can use that 16 GB to load up a few shows or a movie or two if I travel or anything though.

Granted I haven't loaded it up all that much, I have most of what I need (until jailbreak comes out) and I'm using about 800 MBs of my 14 GB available to me, so I think the 16 GB version will be just fine. Would more space be nice? Sure, but I'm not paying $100 just for another 16 GB of memory. I think that's a little crazy.
 
I had a 16 GB iPad classic (I like that name) and now have a 16 GB iPhone 4. Personally my next iPhone will be at least 32GB since it has a mix of music and Apps. The iPad most likely would have only Apps and hardly if any music. 16 GB sounds good for what you plan on doing with it. I would look into a 32 GB model if I was to get an iPad again only because I get app happy and tend to purchase some big apps when they go on sale.

My first gen iPad was 64GB. I only had 12GB on it and that included 2 movies I never watch. I bought a 16GB because it was the only 3G available today at BB and that size will be just fine. I thought I'd need more but after almost a year I found out I did not. I saved 200 bucks this way. Life is good.

This is what happens to majority of the people including me (based on my iPhone experience). I learned my lesson. I don't think I am going to put music on my iPad. I have my iP4 for that. I ordered 16GB and I am sure I will be fine with it!
 
I had a 16GB iPad 1 which I lived with, but I typically kept around 1GB free so that I could still create documents, download apps and other random stuff.

I just bought a 32GB iPad 2 since I ended up using my iPad a lot more than I thought. And now with the extra speed of iPad 2 I find I am using it even more. But now I have around 10GB free but I have all my music on there now.
