Once again, being a third-party as well as a user app, it's easy to revert the icon back after update.
 
I understand that they want to fit in better with the new macOS Big Sur aesthetic, but why do they also force this icon on Catalina users? Is it THAT hard to have different icons depending on OS version?
Sounds like they need to start offering different icon versions that users can easily select somewhere in presences, similar to how some iOS apps do that kind of thing.

That might certainly be a possibility, but from a (typical) user-friendly perspective it's something that should essentially be at the very least offered or actually even automatically implemented by the app/developer.
 
Google Chrome 87 removed the Extensions Toolbar. This is where you could go to chrome://flags Disable it, enables, then all your extra extensions can be seen, accessed, moved; thru the 3 dots Left Click, gave you your hidden extensions that won't fit on the toolbar. Now no more and notice you can't see your extensions that were on the left side they are buried/hidden, pulls & shows extensions now from the right side.

I don't mind if they got rid of the extension icon clutter. I don't mess with them once installed, so long as they keep working, I don't need an icon to remind me they're still there. Extensions such as Adblock, Adguard, I don't care about cookies don't need reconfiguring once installed or any kind of babysitting.
 
DO NOT like this kind of white background icon, anywhere. Used to see these on some android phones, just ugly! Big Sur is ugly just with these icons. I am on Catalina with most recent update the icon was changed, oh no, uninstalled.

Download your preferred icon from some icon website. Open it in Finder by double-clicking on it. Preview should open. Go to Edit, Select all. It should highlight the icon file in a square. Go to Edit, click on Copy.

Go back to the info page for Chrome.app. Click the tiny lock on the lower bottom, and touch ID or enter password. Choose 'read and write' as permissions for all. Then go to Edit, click on Paste. The new icon should be in place of the old one. Click the lock again, and quit all. Close all apps and restart the Chrome app. The new icon should take its place. I'm using the 2010 version icon but using the current Chrome version:

I sure miss that old icon. Yeah, it's out of place today, but I think it's one of my favorite application icons ever.
 
If I could, I'd replace all the app icons with skeuo alternatives. I actually think they'd look nicer in Big Sur.

I also replaced the Firefox icon if you noticed. I mean, what the actual duck is this:

Even with SiP off, I couldn't replace the system icons. It just refuses to allow me to change the permissions. Or they act like everything went, but drag the 'new' icon to the dock and it reverts to the original.

This is as close as I could get, it's not perfect, but I basically re-icon'd the third party alternatives I had installed with Mac iOS 6 icons.

It gets the new icon on Catalina too.

Frankly I don't know if I care for it that much; I like the icons not being constrained to that square-ish shape. But what can I do, it's their app. :)

You can* used to be able to* put a custom icon on anything in macOS with the following:

Right click on an application, file or folder and select Get Info.
In the top left; that little file icon can be clicked and it'll highlight blue.
A custom image icon (found on the web) can be dragged on to that spot.
It'll replace the icon when you drop it there.​

I've had a custom folder icon on every version of Office for Mac until the apps just dumped separately into the main application folder; to find it quickly and so it stood out in my dock.

For instance, my next project is finding the old iWork icon pack to replace the stupid squares... Ugh.

You can replace user app icons, such as those downloaded from websites, but not the ones built into your Mac. Icons for Finder, Mail, Safari, etc can't be changed, even with SiP off. I tried.
