I'm going with Fingerprint Scanner...the S in each model stands for something
3GS "Speed"
4S "Siri"
5S "Security" ?

Advanced widgets which are going to be distributed and approved on the App Store. They are going to say that the new iphone has the processing power/battery life to handle these widgets.
Quick reply for messaging by swiping down/holding down on a text message banner
Ability to lock folders/Apps by using the fingerprint sensor and your unique fingerprint
Camera software features that will take advantage of the new and improved 12 megapixel camera
A option/toggle that will give you control of your flashlight brightness right in control center , whether to use one led or both at the same time(being that the i5S will have a pill shaped dual-led flash.
Offline Dictation for iOS 7
Ability to pick any desired number of apps when in wiggle mode and move them all at once either into a new folder, or a different page

I expect to see quick reply added for iPhone 5S (since it's already in mavericks)
Drag and drop iTunes files would be a game changer just in principle alone. Would sell a good chunk of people.

Quick Reply/Quick Compose texting. With most redundancies being squashed with the betas, it has to be in 7.0.
I mean they have to differentiate the iphone 5S from the iphone 5 significantly enough to make their customers want to upgrade or buy the phone. If not then most people will just settle for the i5
Are you sure that's not just something that people kind of made to fit things, and not something that's officially set up that way?
Not sure about the 4S, but the S in 3GS actually did stand for speed. It was in a bunch of Apple advertising, including paperwork in the retail box.
They publicly stated that the s in the 4s was for Siri. Here's hoping that they drop numbering altogether for the next-gen.
I'm hoping for more, but planning for less. I'm betting ill use my upgrade on the i5
I would like to see it have little plastic covers so I can scuba dive with it. I would also like the screen to be 6.3 inches and a stylus. A blinking light so I know when I have a message would be cool(who needs to sleep). I would also like to watch 4 different videos at the same time and a laser pointer would be cool.
I do recall "speed" being used in conjunction with 3GS when it was announced. Perhaps more to get the people acclimated at the time to the whole "S" part that was brand new.

Since when does Apple, a company who values secrecy, announce new/exclusive features of the new iPhone months before its released?
60fps was already announced at WWDC. It will be available for iPhone 5 at 720p, and 1080p on the 5S (just a hunch).
