I would argue (and I run both Linux and Mac here) that the Mac currently has the best selection of retro game emulation of all platforms

  • OpenEMU - much friendlier and more featureful than Linux alternatives
  • RetroArch
  • vC64
  • vAmiga
  • PS1/PS2/PS3 emulation - with M series CPUs strong enough to actually emulate cell well
Basically any emulator that runs on Linux typically also runs on Mac, the reverse is not true.
There's friendly frontends on Linux too like Emulation Station and RetroDeck. And while the M series CPUs are fast, I'm not sure emulators have put as much effort into Metal backends as they have Vulkan or DirectX.

RetroArch is on everything too.
