it's not a problem if you want to use iCloud, but I don't except for calendar and reminders (both of which are non-essential data for me so doesn't matter if they get lost or messed up)
As I said in my original post, Apple does not provide an MDM setting to disable Apple Intelligence completely. They are giving us Mac Admins the ability to disable certain feature, but it cannot be completely turned off.That would be dependent on the permissions granted to the end user by the MDM, as set by the MDM administrator.
But what is the alternative? Google collects even more data and you definitely can’t opt out (no toggle even). Linux phone?That would be time to leave the Apple ecosystem.

Later on Apple will build their OS so integrated to Apple intelligence that you can’t turn it off, can’t use the OS without it and eventually force enterprise devices to use Apple intelligence or brick their managed devices.That is what is frustrating. For years every update turned on Bluetooth regardless of whether it was on in the first place. That recently stopped much to my delight. So now I have something else to remember to turn off every update.Modern Apple does have a (thankfully limited) history of occasionally ignoring its own preference toggles or just toggling them without user consent. I wish I had kept a list of these instances, but system toggles do, from time to time, ignore one's wishes. I wouldn't be surprised if the so-called Apple Intelligence toggle was re-enabled in some future update.

Currently they cannot be removed if you enabled AI in the first place. The models are stored locally stored and do take up 3-7GB of storage. Once the setting is enabled the storage can't be removed, even if AI is disabled.
You can see the amount of storage AI is using listed under Settings in Storage... I would also imagine not using it would free up a lot of RAM for other tasks, as that was a big thing getting 16GB base into Macs, and requiring 8GB minimum on phones/ipads to use it in the first place. It loads the entire AI model into RAM to work so not using should free up RAM for other tasks.
I think it eventually cleans up after itself. I turned it off one day to try something out with old Siri and forgot to turn it back on. When I did turn it back on later, it had to redownload everything again. People on Reddit have said it will delete after being off for a week, but I don't think I had mine off that long.If you turn it off, does it return to you any storage space taken up when it was turned on? Delete anything that was downloaded when it was turned on?
I wouldn’t mind default on as long as I can easily return to the exact state it was in when it was off.

No conspiracy peddling here. These were just legit questions since I unfortunately haven't kept up with Apples implementation of LLM features so I do not know the details of their privacy stance other then "sure privacy is top priority". Agree I hope apple would not breach trust, but I just dont know what is their official stance on all this so I'm wondering if anyone here has any more insight into how serious they have taken it thusfar or maybe the jury is still out on this topic?Seems like conspiratorial nonsense to me.
The scenario you lay out here basically means that Apple is lying to all of their customers on a massive scale, and putting themselves right in the path to billions of dollars in losses.
Back in reality, though, most of Apple Intelligence is completely on device and what isn’t on device is encrypted and completely anonymized and if it isn’t, then they have a lot of explaining to do.
That would be a massive breach in trust.
