As far as I know, the software driving this setup is a German package called ~sedna presenter which is probably the only corporate-standard multi-layer digital signage solution designed exclusively for the Mac platform.

sedna are closely related to the guys who did all of this large-format multi-touch work; I don't think they're responsible for Apple's installation, although they did provide all of the digital signage at MWSF back in January.

The content looks like something that's been put together in Motion leaning on the particles function: the main content's probably been split into multiple panes of 1365 x 768 (or something similar) in Compressor. The whole thing is probably tied together using ~sedna presenter's multi-screen asset function, but the iPhone mockup probably brings in a simple graphic every 20 seconds or so using another of ~sedna presenter's four layers.
