I hope they keep the iPad mini. It is used widely in aviation as it's the only one that is small enough to be yoke-mounted. Just about every pilot I know (Part 91/135 and even some 121) uses a mini to keep FAA charts and approach plates.

Forgot about the mini, there are rumours about a new model so certainly I can see them sticking with this as it is a product with distinct use cases as you say.

I would also expect it to work with the Pencil 3 which will have USB C charging
 
I think the fundamental question here is, is one getting there moneys worth from the iPad?

9th Gen sure
10th Gen ok - maybe
Air 5 Gen sure I guess - maybe
Pro 11 inch, not really same screen same camera as generation before.
Pro 12.9, Hard to see the value vs the pervious gen.

As other have alluded to, you get more value getting a MacBook Air or even a MacBook Pro vs what one gets from the iPad Pro models especially when you factor in the Magic Keyboard and Apple Pencil. The hardware is second to none which might be part of the problem overall since they have no competition but the biggest problem is the software just doesn't cut it. Whether that means making the Pro run OSX or something better, something has to be done because the status quo just doesn't cut it. Adding OLED is just really adding a bandaid to the situation. The heart of the issue is the software.
 
My iPad mini 2 is still going strong. A shame it has not the latest iOS so some apps won't work.
