Apple maps are bad in terms of details. All they have for them is 3D, which is a gimmick. I'd rather have street view over that 3D crap. Navigation wise, I'd take Google once again over Apple's current solution.
Do you have iOS 6 GM installed to make such a comparison? Because I have iOS 6 Beta 4 and actually like it more than Google's iOS app. It's unfair to draw comparisons until it's ready for consumer usage, IMO.
There is NO navigation option with turn by turn directions for iOS on Google's app, so how you are making that comparison is beyond me.
Street view, to each their own. I've never used this feature, and think flyover is equally as powerful. But this is strictly opinion.
Yet the backbone and all framework is already baked into the OS, downloading the app just makes the options available. In other words, all that bloat is there from the start.
If it's not enabled, it's not eating system resources. If it's not installed, it's not eating space. So you're complaining about a measly few megabytes at most of Twitter and Facebook API's?

We can't all cherry pick the API's and preloaded items, even ANDROID doesn't let you do that.
No they are not. All you really have to do is download the face of the entire applications but everything else is there. That is just bloatware for those who do not wish to use those services.

Yes Google states it is working, but until it is out, it is all but vapor. Not that I doubt Google, I just use their mapping and video services quite a lot. Yes I do use YouTube app a lot and will find it hard to replace easily. I don't like the browser approach.
Simple. Add the mobile youtube app that is already available. See above. Why anyone would prefer an inferior app with lower quality streaming and less features is beyond me.

You are entitled to your own opinion, but personally I feel their levels of cartography aren't off, just different. We have become so accustom to Google's for the past 5 years that change is assumed to be difficult.
Having used iOS 6 maps for a few weeks now, I look at Google maps and find it weird.
Bloat doesn't mean CPU and/or RAM consumption, it also means space consumption and bigger OS footprint.
I will gladly rip out the API's and whatnot to show you that Twitter and Facebook integration, without them being enabled and without the apps installed, consumes maybe a few megabytes at most. Is this really worth complaining over?

If it really bothers you, you can SSH into it and remove these items you know. I have removed certain setting panes this way.
All in all, sounds like you are better off moving to another mobile phone OS or staying on iOS 5.
