Does anyone know how to get a delivery time estimate with UK Mail - some people who got their watches on launch day were getting hour windows and then texts to say they were next?

It just has. Now showing 'At delivery location'. I'm in Surrey....
I'm in Surrey too didn't reach delivery location til 6:48 mines coming from Aldershot UKMail depot
UKMail also offer one hour windows via text message (although it seems they turn up when they fancy sometimes!), but they definitely offer it.
Good luck those getting your Watch today, as I keep saying-it'll be worth the wait.
You might get that in some areas or if they sub out the actual drop to someone like DPD (excellent!). But all we got last Saturday in London for my girlfriends 38mm green strap was 'scanned at depot' and 'out for delivery', with the actual delivery 7 hours later. We tried 'Deliveries' and 'Parcel' (usually good) for iOS, and direct with the website, and via the Apple site which was probably the quickest to update.
So YMMV! At least you're on the last lap with the finish line in sight.

Can't remember this happening with the Apple order received yesterday though.

Central London delivery: 06:08 At delivery location.
I ran to the window to see if they were waiting until 7am to ring the door bell. I was excited until I realised it means the watch is now at the Delivery Depot.

I'm waiting for an SW1 delivery (Waterloo). Still showing 05:11 At Delivery Location.
That's where mine should be too! Though I reckon I'll be collecting from the depot either this evening or tomorrow morning as I can't always be at home today and they won't leave it with a neighbour
