I've done that already, now i have only Mojave on Bay 1, nothing else...

The thing is what to do next... Its safe to try reinstalling OC on Bay 2 and Monterey on one of the Samsungs?

Maybe this time i could try to place the oc EFI folder inside the nvme (boot drive)?
Maybe take a step down and install Big Sur or Catalina on the nvme?

Problem solved! I dont known why but after installing Monterey on the Samsung 960 evo and using Migration Assistent to transfer account, apps and data from the sata SSD install via USB/sata adaptor everything is working perfectly now...

I also have a Samsung 970 Evo Plus installed using the specific adapter. I've installed Windows 11 only on it, no OCLP, but I'm having some issues with sleep mode. I can't figure out if the problem is the SSD or the GPU drivers.

You didn't wrote if this is for a MacPro5,1 or MacPro6,1.

For the former, installing UEFI Windows without OC/OCLP disabling Windows Secure Boot signing of the MacPro5,1 BootROM is a extremely bad idea, the corruption of the NVRAM volume of the BootROM will gonna kill your backplane.

Sleep is one of the first things that stops working correctly the moment the NVRAM volume inside of the BootROM starts to become corrupt.

If you have the MacPro6,1, did you replaced the RTC BR2032 battery? Check the voltage with the testpoints:


 
The BR2032 battery is hard to find and quite expensive. For now I’ll keep it as it is, as soon as I manage to find one at a reasonable price, I’ll replace it. Thanks

Still worth it I think.
I changed my original battery after 12 years (I can’t remember ever changing it before… 🤔), it wasn’t even showing any issues but thought I would replace anyway, but my cMpro never gets shut down, only sleeps.
 
The case in Australia gets weirder, remembering last time i bought one - they're not offered in the local market as a retail product, and it's illegal to sell coin cell batteries that aren't in tamper-proof / child proof retail packaging. It required a special order from a local battery supplier, who had to call up to the official distributor to get special dispensation to supply one to me.
